Rosemary Potatoes

A simple and filling side dish.
Ingredients
- 1lb potatoes
- 2 tablespoons fresh rosemary (minced)
- 2 tablespoons avocado oil
- 1 teaspoon salt
Directions

Preheat oven to 425F (220C).
- Rinse and dry the potatoes. Cut in half and pat dry again.
- Add potatoes to a bowl and toss with the rest of the ingredients.
- Spread evenly on a baking sheet.
- Roast for 30 minutes or until they are tender and cooked through.
- Broil on low for 5 minutes to slightly brown.
- Garnish with fresh rosemary if desired.
