Ingredients

Chicken

  • 1 lb chicken (breast or thigh)
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon italian seasoning
  • 1 teaspoon salt
  • 2 tablespoons ghee
  • 2 tablespoons balsamic vinegar

Topping

  • 2 tomatoes (diced)
  • 1 garlic clove (minced)
  • 2 tablespoons parsley (chopped)
  • 2 tablespoons onion (diced)
  • 1 teaspoon salt
  • ½ lime (juiced)

Directions

  1. Season chicken with the dry ingredients and set aside.
  2. Heat the ghee in a saucepan over medium heat.
  3. Add in the chicken and cook fully through on all sides.
  4. Meanwhile combine all the ingredients for the topping.
  5. Transfer the chicken to a plate. Add the topping.
  6. Drizzle the balsamic vinegar on top.

Ingredients

Meatballs

  • 1 lb minced chicken
  • 1 large egg
  • ½ cup onion (diced)
  • 3 garlic cloves (minced)
  • 2 tablespoons parsley (finely chopped)

  • 2 tablespoons organic napolitana sauce (Kirkland)
  • 1 tablespoon ghee
  • 1 lemon (juiced)

Directions

  1. Heat ghee in a skillet over medium-high heat.
  2. In a large bowl combine the chicken with the onions, garlic, egg, herbs, and lemon juice.
  3. Once it is mixed well, shape into round balls.
  4. Add the meatballs to the skillet. After a few minutes add the napolitana sauce.
  5. Continue cooking until the meatballs are fully prepared.
  6. Place the meatballs onto a plate, pour the sauce on top.

Jerk Seasoning

  • 2 teaspoons allspice

Mango Salsa

Directions

  1. Combine all the ingredients for the jerk seasoning in a bowl.
  2. Season both sides of the chicken heavily with the jerk seasoning.
  3. Heat the avocado oil in a skillet over medium-high heat.
  4. Add the chicken and cook 3-5 minutes on one side without moving.
  5. Flip the chicken over and repeat until fully cooked on both sides.
  6. Transfer to a cutting board and let it rest for 5 minutes.
  7. Spoon the cauliflower rice into serving bowls. Add in the mango salsa.
  8. Cut the chicken into slices. Add it into the bowl.
  9. Accompany with lime wedges.

Directions

  1. Preheat the oven to 350F (175C).
  2. Line a baking tray with aluminum foil or parchment paper.
  3. Place cashews onto baking tray,  add in the spices.
  4. Mix around the cashews until fully coated.
  5. Spread out evenly without overlapping.
  6. Bake for 15 minutes.
  7. Take out tray and mix the cashews with the seasoning again.
  8. Transfer to a serving bowl.

Marinade

Shrimp

  • 1 lb shrimp (peeled)
  • 2 garlic cloves (minced)
  • 2 tablespoons avocado oil
  • 3 tablespoons ghee
  • 1 lemon (juiced)
  • 1 teaspoon lemon zest
  • ¼ cup chicken broth

Garnish

  • 3 tablespoons parsley or cilantro (chopped)

Directions

  1. Place shrimp into a bowl. Pour in the marinade and coat fully. Set aside for 25 minutes.
  2. Afterwords, heat the avocado oil in a large pan over medium-high heat.
  3. Add shrimp and cook for 2 minutes on each side. Place aside.
  4. Keep the oil in the pan and add in the garlic. Cook for 1 minute, until fragrant.
  5. Add in the chicken broth, lemon juice, and lemon zest.
  6. Cook until the sauce has reduced, about 4 minutes.
  7. Add in the ghee, continue cooking until the sauce begins to thicken, about 3-4 minutes.
  8. Place the shrimp back in the pan and coat with the sauce.
  9. Continue for another 1-2 minutes until shrimp are fully cooked.
  10. Once plated add parsley or cilantro on top.
  11. Accompanies well with garlic steak.

Ingredients

Shrimp

  • 1 lb shrimp (peeled)
  • 3 tablespoons cajun seasoning
  • 1 teaspoon salt
  • 2 tablespoons ghee

Grits

  • 12 oz frozen cauliflower
  • 2 garlic cloves (minced)
  • 2 tablespoons ghee
  • 1 teaspoon salt

Garnish

  • 2 tablespoons parsley (chopped)

Directions

  1. Fill a pot with 2 cups of water and bring to a boil.
  2. Place the cauliflower and minced garlic into the pot. Cover and steam until tender.
  3. When tender, place the steamed cauliflower and garlic into a food processor. Add ghee.
  4. Mix until the desired texture. Add salt and some of the water, depending on preference.
  5. Place the shrimp in a wide bowl. Pour in the cajun seasoning.
  6. Mix until shrimp are entirely coated. Add salt according to preference.
  7. Heat the ghee in a large pan over medium-high heat.
  8. Add the shrimp and cook fully through on both sides.
  9. Meanwhile, divide the cauliflower “grits” into two even bowls.
  10. Once shrimp are cooked, place half on top of each serving of grits.
  11. Add some ghee to the pan and mix with the leftover seasoning to create a sauce.
  12. Pour the sauce over the dish. Garnish with parsley.

Veal Scallopini

  • 1 lb veal cutlets
  • 2 tablespoons coconut flour
  • 2 tablespoons arrowroot or tapioca flour
  • 1 teaspoon salt
  • 6 tablespoons ghee
  • 2 tablespoons avocado oil
  • 4 cups mushrooms (thinly sliced)
  • 2⁄3 cup chicken broth
  • 4 teaspoons fresh parsley (minced)

Directions

  1. Combine coconut flour and salt in a small bowl. Fully coat the veal cutlets in the mixture.
  2. Heat 4 tablespoons ghee and the avocado oil in a skillet over medium heat. Add the veal.
  3. Cook until almost fully ready. Remove and keep warm.
  4. Add the mushrooms to the skillet and cook until tender, about 2-3 minutes.
  5. Place the veal back into the skillet. Stir in the broth.
  6. Add the parsley and remaining ghee. Cook and stir until slightly thickened, 1-2 minutes longer.

  • 3 tablespoons pesto sauce
  • 1 tablespoon avocado oil
  • 1 lemon (juiced)

Zoodles

  • 8 cups zucchini noodles
  • 1 teaspoon sea salt
  • 1 tablespoon garlic powder

Directions

  1. Preheat oven to 400F (200C).
  2. In a large bowl combine the turkey with the onions, garlic, egg, herbs, and lemon juice.
  3. Once it is mixed well, shape into round balls.
  4. Place into the oven for 20 minutes and bake until meatballs are fully cooked
  5. When there is about 5 minutes left, start on the zucchini noodles.
  6. Heat avocado oil in a medium pan over high heat.
  7. Use a paper towel to squeeze excess water excess water out of zucchini noodles.
  8. Add zucchini to the pan and toss for 3-5 minutes.
  9. Add the salt and garlic powder while tossing. Add in a 1 tablespoon of pesto sauce.
  10. Place zoodles into a bowl, top with meatballs and the remaining pesto sauce.
