Shrimp and Grits

Ingredients

Shrimp

  • 1 lb shrimp (peeled)
  • 3 tablespoons cajun seasoning
  • 1 teaspoon salt
  • 2 tablespoons ghee

Grits

  • 12 oz frozen cauliflower
  • 2 garlic cloves (minced)
  • 2 tablespoons ghee
  • 1 teaspoon salt

Garnish

  • 2 tablespoons parsley (chopped)

Directions

  1. Fill a pot with 2 cups of water and bring to a boil.
  2. Place the cauliflower and minced garlic into the pot. Cover and steam until tender.
  3. When tender, place the steamed cauliflower and garlic into a food processor. Add ghee.
  4. Mix until the desired texture. Add salt and some of the water, depending on preference.
  5. Place the shrimp in a wide bowl. Pour in the cajun seasoning.
  6. Mix until shrimp are entirely coated. Add salt according to preference.
  7. Heat the ghee in a large pan over medium-high heat.
  8. Add the shrimp and cook fully through on both sides.
  9. Meanwhile, divide the cauliflower “grits” into two even bowls.
  10. Once shrimp are cooked, place half on top of each serving of grits.
  11. Add some ghee to the pan and mix with the leftover seasoning to create a sauce.
  12. Pour the sauce over the dish. Garnish with parsley.

  • 1½ tablespoons paprika

  • 1½ tablespoons garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon cumin

  • 1 tablespoon dry mixed herbs (basil, thyme, oregano, marjoram)
  • 1½ teaspoons salt
  • 1 teaspoon pepper

Directions

  1. Mix all the spices and herbs in a bowl.
  2. Store in a sealed jar.

Garlic Steak

Ingredients

  • 12 oz sirloin steak
  • 4 garlic cloves (minced)
  • 2 tablespoons garlic sauce (coconut secret)
  • 2 tablespoons coconut amino teriyaki sauce (primal kitchen)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon ghee

Directions

  1. Cut the large steak into smaller pieces.
  2. Season with all the dry ingredients. Make sure each steak is evenly seasoned.
  3. Place steaks into a bowl. Add the minced garlic and both sauces.
  4. Fully coat the steaks and set aside to marinate for about 15-30 minutes prior to cooking.
  5. Once ready, melt the ghee in a large pan on medium-high heat.
  6. Add the steaks and cook to your preference.
  7. Accompany with rosemary potatoes.

Pork Carnitas

A healthy take on a classic Mexican dish.

Ingredients

  • 5 lb pork shoulder
  • 1 large onion (diced)
  • 4 garlic cloves (chopped)
  • 1 tablespoon oregano
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 orange (juiced)
  • 2 tablespoons bbq coconut amino sauce

Directions

  1. Place the onion, garlic and orange juice into a slow cooker.
  2. In a small bowl mix all of the seasoning together. Set aside.
  3. Rinse and pat dry the pork. Trim the excess fat.
  4. Rub the seasoning mixture generously around the entire pork shoulder.
  5. Place into the slow cooker and set the timer for 4-5 hours on high or 7-8 hours on low.
  6. Once cooked, transfer to a cutting board in order to shred the pork.
  7. Transfer to serving platter and mix in the bbq sauce.

Prosciutto Deviled Eggs

A simple twist to a classic breakfast dish.

Ingredients

  • 6 eggs
  • 4 strips prosciutto
  • 3 tablespoons homemade mayo
  • 1 pickle (diced)

Directions

  1. Preheat your oven to 400F (200C).
  2. Turn your stove on high heat and submerge your eggs in a pot with enough water.
  3. Place the prosciutto into the oven for 15-20 minutes.
  4. Cook the eggs until the water boils. Leave the stove on for an additional few minutes.
  5. Drain the water and place the eggs into a bowl with ice immediately to chill.
  6. Once the eggs have cooled off, begin to peel.
  7. Cut the eggs in half and scoop out the yolks. Place into a small bowl.
  8. Mash the yolks with a fork. Add the mayo, pickles, salt, and pepper. Stir together until creamy.
  9. Fill the eggs with the mixture.
  10. Remove the prosciutto from the oven and crumble on top.

Ingredients

  • 1 lb chicken breasts 
  • 2⁄3 cup coconut aminos teriyaki sauce
  • 1 tablespoon avocado oil
  • 2 garlic cloves (minced)
  • ½ teaspoon salt
  • ½ tablespoon arrowroot or tapioca powder
  • ½ tablespoon sesame oil
  • 2 tablespoons sesame seeds

Directions

  1. Whisk the arrowroot powder, coconut aminos, and sesame oil in a small bowl.
  2. Rinse the chicken and pat dry. Cut into bite-sized pieces. Season with the salt.
  3. Heat the avocado oil in a large skillet over medium-high heat.
  4. Add the chicken pieces and cook until it looks nearly ready, then add in the garlic.
  5. Cook for an additional 30 seconds. Remove the chicken and garlic from the pan and set aside.
  6. Reduce the heat to medium and add the sauce to the pan. Cook until thickened.
  7. Return the chicken to the pan and toss to coat, not more than about 30-60 seconds.
  8. Season with sesame seeds and any other garnish, according to preference.

Ingredients

  • 5 ripe bananas (about 1½ cups mashed)
  • 6 large eggs 
  • 3 tablespoons maple syrup
  • 3 tablespoons almond butter 
  • 1 teaspoon vanilla extract
  • ¾ cup coconut flour
  • teaspoons ground cinnamon
  • ¾ teaspoon baking soda
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon ghee
  • 1 pinch of salt

Directions

  1. Take the eggs out prior to cooking so they can be room temperature before you begin.
  2. Preheat oven to 350F (175C).
  3. Line a loaf pan with parchment paper. Lightly coat with ghee and set aside.
  4. Mash the bananas in a large bowl using a hand mixer on low speed.
  5. Whisk in the eggs, maple syrup, almond butter, and vanilla. Hand mix until combined.
  6. Add the remaining ingredients. Keep mixing until evenly combined.
  7. Pour the batter into the pan.Gently smooth the top.
  8. Place in oven and bake for 50 to 60 minutes. 
  9. The top should be golden and a toothpick inserted in the center should come out clean.
  10. Remove from the oven and let it cool before slicing.

Steak Taco Bowl

Ingredients

Steak

  • 1 lb steak (flank or strip)
  • 1 tablespoon garlic powder
  • ½ teaspoon salt

Rice

  • 1½ cups cauliflower rice
  • 4 tablespoons cilantro (chopped)
  • ½ lime (juiced)
  • ½ teaspoon salt

Guacamole

Mango Salsa

Directions

  1. Rinse and pat dry steak. Season with salt, pepper, and garlic powder; put into a bowl.
  2. Add in the lime juice; turn to coat. Set aside to marinade for 30 minutes.
  3. Place the cauliflower rice in a medium saucepan over medium heat.
  4. Add a little water to the saucepan and cover. Cook until steamed.
  5. Add in the cilantro and lime juice. Season with the salt. Set aside.
  6. Heat avocado oil in a skillet over medium-high heat. Once hot, add in the steak.
  7. Sear without moving. Cook for about 3-4 minutes on each side.
  8. Transfer to a cutting board and let it rest for 5 minutes. Slice the steak against the grain.
  9. Spoon the cauliflower rice into serving bowls and top with steak.
  10. Add in the mango salsa around steak and top with half the guacamole per bowl.

Chicken Casserole

Ingredients

  • 4 cups shredded chicken (cooked)
  • 2 tablespoons avocado oil
  • heads broccoli (florets removed)
  • 1 cup mushrooms (sliced)
  • ½ small onion (diced)
  • ¼ cup chicken broth
  • 2 cup vegan Alfredo sauce (primal kitchen)
  • 1 teaspoon salt

Directions

  1. Preheat the oven to 400F (200C).
  2. Heat the avocado oil in a large pan over medium heat. Add the mushrooms and onion.
  3. Stir for 3 minutes. Add the broccoli florets and stir for another 3 minutes.
  4. Place the shredded chicken into a casserole dish, covering the bottom.
  5. Add the sautéed mushrooms, onions and broccoli in a flat layer on top.
  6. Stir the chicken broth into the Alfredo sauce, then pour on top.
  7. Use a spatula if needed to make sure everything is well coated.
  8. Cook the casserole for 20-25 minutes. The sauce should be bubbling and slightly reduced and thickened.

Rosemary Potatoes

Ingredients

  • 1lb potatoes
  • 2 tablespoons fresh rosemary (minced)
  • 2 tablespoons avocado oil
  • 1 teaspoon salt

Directions

  1. Preheat oven to 425F (220C).
  2. Rinse and dry the potatoes. Cut in half and pat dry again.
  3. Add potatoes to a bowl and toss with the rest of the ingredients.
  4. Spread evenly on a baking sheet.
  5. Roast for 30 minutes or until they are tender and cooked through.
  6. Broil on low for 5 minutes to slightly brown.
  7. Garnish with fresh rosemary if desired.
